The best pumpkin cookies you will EVER eat!

During the fall I just love to bake. There is just something I love about turning my oven on and getting the mixer out on a cold, cloudy day. My favorite cookie to make during the fall season is pumpkin chocolate chip cookies. But I have a special recipe that I just love.

These may look like any normal pumpkin chocolate chip cookies. But I promise you, they're not. Whether you like it or not these cookies disappear fast. You learn to hide a few for yourself!





The best Pumpkin chocolate chip cookies you will ever eat:

3 sticks butter
2 cups brown sugar
1 cup sugar
1 egg
1 t vanilla
16 oz can pumpkin

4 cups flour
2 t baking soda
1/2 t baking power
1/2 t nutmeg
1 t salt
2 t cinnamon
2 cups oatmeal
2 cups chocolate chips

Mix butter & sugars. Add the rest of the wet ingredients. Mix the dry ingredients in a separate bowl & add them to the wet. Add the oatmeal & chocolate chips.
Bake at 350 degrees for about 15 minutes.

These are my favorite fall cookies. I hope they'll become your favorites too!

Mini bites of Joy

I made some mini cupcakes on Friday night for a baby shower Saturday morning. Wait no, I was gone mostly all day Friday so my mom baked them for me. :) I decorated them. I LOVE mini cupcakes! They are just the cutest thing and you can eat like 10. Really. :) Also thank you to my amazing mother who stayed up with me till midight making these cupcakes... even though I was grumpy and not very nice to her. What did I say, She's amazing! Here are the cupcakes. I tried to get the to match at well as I could. The balls on top are gumballs from Michale's, and the little balls on the red cupcakes are just candy balls. The flavors were: white with cream cheese, chocolate with butter cream, and red velvet with cream cheese.

What makes you happy?

Yesterday marked 6 months since my wonderful sweet grandma leaving this earth. I am sad. But I know I have much reason to be sad. One of the most elect lady's has left us and returned to our father in heaven. She is happy and I know wants me to be too, even though it is really hard. I know she is right now doing something that brought her much joy in her life. Sharing the gospel of Jesus Christ. I know she is helping others to learn of this wonderful church. She is being very patient and loving while she does this too I know. It is amazing to imagine. I will try to do my best to also share the gospel with others, so that they can feel the joy and peace that I have!

My Grandma was a LOT of fun. She was always telling us stories, or making us laugh. She loved to laugh! She taught me how to make her amazing brownies, and always showed us what she was sewing. A lot of the things she made for us! She was the queen of games and loved a good game of phase 10 or scrabble. She would always sing some pretty funny songs to me and she always encouraged me and was there to talk to me.

I Miss her a LOT. But I know she's busy somewhere on the other side smiling.... and when she smiles YOU smile. I know she would not want me posting about how sad I was here but instead finding something else to be happy about. So here are some things that I am happy about that have been going on in my life or have made me smile.

I am happy about completing our Classical acting play "Two gentleman of Verona". It was so much fun to do but the joy definitely comes in the completing of it! My mom was the director and she did an amazing job. She spent more than 12 plus hours a day for a few weeks on this play!

I was happy that I got to spend Natalie's birthday evening with her. It was on the night of the play. Here she is opening the gifts I got her. I got her a bunch of our "Favorite things" we like to eat or do. And just some random stuff too, but she liked it. Sorry the picture is blurry.

I am really happy because I now have a garden!!! For one of my classes we have to plant a Garden and I finally did it. It is a hanging garden made from shoe organizer. Sounds weird yes, but I think it it pretty cool! I am growing, 3 kinds of flowers, carrots, rosemary, cilantro, green onions, lettuce, and spinach.

I also planted this pretty flower that has an AMAZING fragrance!
And.... A raspberry bush! We havn't planted it yet, but it's outside and it does look better than it does in the picture. (That's a picture from when I first bought it.)

I am happy because on Sunday we are leaving for a little vacation! My dad has work in Arizona and we are staying at a really nice hotel! This is just ONE of the pictures (I found on there website) of the pools where we are staying. They have a lazy river too! I can't wait to go get in that pool....

But I'm smiling even more because some of my favorite people are coming and meeting up with us in Arizona!! Susan, Dave, Josh and Holly! Were excited!

I am happy for this pretty picture of some flowers in my Grandparents backyard after General conference. Conference was awesome!

And I was so happy for the great hike me and Evan went on yesterday. It was so pretty!

Okay and now I am happy because I finally got got up with some stuff I've been doing! I'm not at all caught up with my flicker but at least I am with my blog! :)

A baking post!

Yea!! I haven't done a baking post in a while...So here it is! Up first is......

Valentine cookies you will want to make, (and um, eat!)

So for some time I have been looking for a good royal icing type of frosting recipe. Well I can't remember which blog I clicked on and it took me to this awesome recipe on an awesome blog!
Click HERE to see this REALLY easy icing recipe! It's not royal icing but it is way easier to make I think! (I never have tried making royal icing though). And then once you read how to make the icing you can get cute ideas on how to make your valentine cookies! HERE is her post on her CUTE cookies!


I will say this icing was difficult for me to work with at times! AND frustrating but it was worth it! (It also took a looong time.) I didn't like how some of them looked with plain incing but then when I piped words on them they looked cuter. I wished they looked perfect but they don't but that's okay. Oh and my favorite thing is that even when the icing dries (it takes a few hours once on the cookies) the cookies still stay shiny and glossy! BTW- For the cookies I just used a cookie mix.

Valentines day projects

We did a lot of stuff for Valentines day!

We made Cookies made for our neighbors and other people in our ward.
My mom made these "Valentine CD's".

My mom (I helped some) made these cute lollipops. (She made them for primary).

For part of out girls camp fundraiser we helped make heart cookies. These are the ones me and my friend Natalie made.


We got "heart attacked" from the activity day girls.
And brought us cute treats!

What do you do with cute boxes you found in the $1 section at target?
And cute cupcakes??? AND m&m's??

For dessert my mom made the batter for the cupcakes and I piped them. They turned out really cute!
